Tasty tuna melt
Ingredients:
- 1 can (170g) light tuna packed in water, drained
- 1 tablespoon mayonnaise
- 1 small onion, finely chopped
- 2 whole grain English muffins
- ½ cup grated cheddar cheese
Directions:
- In a bowl, mix the tuna, mayonnaise, and onion.
- Open the English muffin and top each half with the tuna mixture.
- Place in a glass baking pan.
- Put the cheddar cheese on top.
- Broil in the oven until the cheese is melted.
- Try some raw veggies or a salad on the side.
Store and prepare raw meat, poultry, seafood, and eggs separate from foods that will be served raw.
Mexican stuffed pita melt
Ingredients:
- 1 can (540 mL) black beans, or chickpeas, drained and rinsed
- ½ cup salsa
- 1 can (341 mL) corn, drained
- 1 package whole grain pita pockets
Directions:
- Mix the beans, salsa, and corn in a bowl.
- Cut each pita in half to make two pita pockets
- Scoop the mixture into each pocket.
Store the leftover bean mixture in a container in the refrigerator.
