The feedback from participants of the Under COOKstruction pilot led to numerous changes to the program.
The food safety content delivered during the sessions by the CFAs has been streamlined to allow for more time for food preparation and group discussion. In order not to lose any of the content, food safety tips were added to the cookbook. Having these tips within the cookbook also means students will have the opportunity to review information that may have been new to them.
In response to feedback regarding knife safety a search and review for alternative knife safety-related videos was conducted. To date a better video has not been found. Therefore, the video used in the pilot will continue to be used. An interactive knife skill practice component will be added to the session after the video is played for the students.
Feedback led to revisions in the manual for the CFAs and the cookbook. Pictures of the completed recipes have been added to the cookbook. All the recipes were reviewed and deletions, revisions and additions made as appropriate. The Under COOKstruction title will remain and appropriate graphics have been added to incorporate suggestions made by the students.
These changes will be implemented in the Under COOKstruction programs offered to secondary schools in the 2009-2010 academic year. KFL&A program staff will continue to monitor the program and collect feedback from students for ongoing evaluation.
